Happy Thanksgiving!

My turkey has been brined, rubbed down with various seasoning and basting agents (over and under the skin), stuffed with aromatics, stuffed into a roasting bag, nestled on a rack (to make my mother happy), and tucked into the oven with a meat thermometer strategically placed.

Pray for me.

But seriously, thanks for all the turkey advice. I am confident that if this turkey does not turn out, it will not be for lack of knowledge or effort.

Now to tackle the side dishes.
